Paleo Chocolate Chip Cookies

  • Paleo Chocolate Chip Cookies


    1 cup blanched almond flour
    1/4 cup coconut flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    6 Tablespoons coconut oil (ghee or unsalted butter), room temperature.
    3/4 cup coconut sugar (brown sugar works too)
    6 Tablespoons Almond Butter (I used peanut butter as that's what I had on hand)
    1 1/2 teaspoon vanilla extract
    1 large egg, room temperature (or 1 chia egg
    1 1/4 cup semi-sweet chocolate chips (I used caramel chips for these ones)


    • Preheat oven to 350*F and line a baking sheet with a piece of parchment paper.
    • Mix almond flour, coconut flour, salt and baking soda together. Set aside.
    • In a large mixing bowl mix with a mixer, fat and sugar at medium speed until well combined.
    • Beat in the almond butter, vanilla extract and egg until well incorporated. Stir in the flour mixture until well combined. Then stir in your chocolate chips.
    • Roll the dough into small balls and place 4" apart on the baking sheet. Press the cookies down light with the palm of your hand.
    • Bake for 11-14 minutes (if using coconut sugar) or 14-17 minutes (if using brown sugar) or until the cookies appear thoroughly baked.
    • Let cook completely on baking sheet and enjoy!

  • I've been making these a lot as of recent and I've been skipping the nut butter all together. When you leave out the nut butter and use butter or ghee in place of coconut oil, these dang things taste almost identical to the Nestle Toll House chocolate chip recipe.

    They're dang delicious and because of the use of nut flours and coconut sugar, way easier on your blood sugar :)
