Peanut Butter Crunch Bars



  • Consider these a much healthier version of a Nestle Crunch bar mixed with a Reece's peanut butter cup.

    In a small saucepan on the stove, Melt together:
    ½ cup coconut oil
    ¼ cup almond butter or peanut butter (you can use crunchy if you'd like)
    2 oz dark chocolate (1/3 cup Enjoy Life chips)
    ¼ tsp salt (optional, depending on how salty the almond/peanut butter is)
    1 tsp vanilla

    Stir in:
    Approx 2 cups: any combination of seeds & chopped nuts of your choice. (I used brown rice crispy cereal)

    Spoon into mini-muffin tins w/liners. OR- Silicone muffin pans or candy molds work best to pop-out when frozen. Half-full makes 24. OR spread out on a parchment paper lined baking sheet.

    Cool in fridge or freezer & pop-out of pan or cut into individual bars to enjoy! Wrap each individually in saran wrap or wax paper, store in the fridge or freezer.
