Copycat Hellman Mayo

I've tried a few different recipes trying to get the same flavor of Hellman's (aka Best Foods) Mayonnaise and this is the first one to be almost identical (minus all the junk in Hellman's) :)
1 egg yolk
2 1/4 teaspoons apple cider vinegar
1 teaspoon water
1/4 teaspoon plus 1/8 teaspoon salt
1/4 teaspoon plus 1/8 teaspoon granulated sugar
1/2 teaspoon lemon juice
1 cup avocado oil
Add all of the ingredients into a blender, except the oil. Blend until smooth. While blending the other ingredients, trickle the oil in until you get a smooth consistency.
Makes approximately 1 cup. Safe to store for a couple weeks, however if you're a mayo lover I doubt this recipe will make it to day two in your home ;)
*White pepper is traditionally used in Mayo as it blends in with the color.
- Don't be afraid to play around with the recipe to make it spicy. Horseradish, Dijon, Cayenne Pepper, Sriracha are all great additions.
- If you don't have Avocado Oil you can use other oils. Lightly flavored oils are best suited for mayo: canola, sunflower, light olive oil (virgin olive oil tends to have a very olive oil taste), grapeseed oil, etc...
***If the raw egg worries you, fret not. The vinegar and lemon essentially "cook" the egg ridding it of any harmful effects.
