  • Dairy Free Sour Cream

    1 cup raw cashews
    2 teaspoons cider vinegar
    1 teaspoon lemon juice
    1/8 teaspoon fine sea salt
    1/4 cup water

    Place cashews in small bowl and cover about 1/2-1 inch with warm water. Let soak over night. Next day drain the cashews and place in a blender with vinegar, lemon juice, salt and water. Blend until very smooth. Add more water to get smooth texture, if needed.

    Serving size: 1/4 cup, 150 calories (110 from fat), 12g total fat, 2g saturated fat, 0mg cholesterol, 60mg sodium, 8g carbohydrates, (1 g dietary fiber, .2g sugar), 5g protein.

  • Made some Dairy Free Nacho Cheese Sauce and Dairy Free Sour Cream last night for nachos. Very delicious! I did add Chipotles in Adobo Sauce to the cheese sauce, a wee bit too hot lol, Next time I'll be adding some Cholula instead.
