Italian Zucchini "Noodle" Pasta

  • Italian Zucchini "Noodle" Pasta

    2 Zucchinis, *spiraled into noodles
    2 Bell Peppers, diced
    1 Onion, diced
    1 Tablespoon, minced garlic
    1/2 pint Grape Tomatoes, halved
    Salt and Pepper to taste
    2 Tablespoons Basil
    1 Tablespoon Crushed Red Pepper
    Parmesan to top

    Saute the Bell Peppers, Onion and Garlic until nice and soft. Add the Zucchini and tomatoes into the pan, continue to cook until Zucchini is hot. Be careful because overcooking it will turn the Zucchini into much.

    Pour the mixture into a bowl, add the seasonings, top with Parmesan Cheese and Enjoy!


    • The easiest way to spiralize vegetables is to use a Spiralizer. I used this one when I was first starting out in vegetable spiralizing. I found it to be slightly hard to use and very hard to clean.

    I started my search for a better Spiralizer and settled on the Paderno World Cuisine Spiralizer Pro, 4-Blade. I find the Paderno to be easier to use and way easier to clean. It's bulkier and slightly expensive, but worth it!
