Broccoli Cheddar Soup
Ingredients:
1 tablespoon oil
1/2-1 onion, chopped small
5 cups broccoli, chopped (I like to take 4 cups and chopped extremely finely, 1 cup rough chopped).
1-2 cloves garlic, minced
4 Tablespoons butter
2 carrots, grated
1/2 cup flour
8 cups broth (chicken and vegetable work best)
1/2 Tablespoon Lawry’s seasoning
Pepper to taste
8oz cheddar, shredded
1 cup heavy creamDirections:
In a soup pot, add the oil, onions, broccoli, carrots and garlic. Sauté over medium heat until vegetables begin to soften. Add the butter and flour next, mix well to cover the veggie mix with the flour. Pour in the broth, add the seasonings, stir, cover and simmer for 20 minutes. Stirring occasionally. Soup should thicken, veggies should become soft. Right before serving, add in your cheese and heavy cream. Mix well.Serve with some fresh grated cheese and we love to top with bacon bits. Enjoy!
NOTE: if you are sensitive to dairy, omit the cheese & cream. It’s a very delicious soup without dairy.
