  • Veggie Fajita Bake


    1 large onion, halved and then sliced
    1 bag mini bell peppers, thinly sliced (you can use regular bell peppers too)
    A few handfuls of broccoli florets, chopped up
    1lb meat, thinly sliced
    1 can Rotel tomatoes
    1 tablespoon avocado oil
    1 packet Fajita seasoning
    ** feel free to add beans or whatever else you wish, this can be modified to fit your tastes.

    Preheat oven to 400 degrees Fahrenheit. In a 9x13 casserole dish, add your ingredients. Mix well, making sure the spice and oil is evenly distributed. Bake at 400 degrees for 20 minutes, or until the meat is thoroughly cooked. Serve as is, in tortillas, over rice, over chips or mashed potatoes. Enjoy!
