    Ingredients
    1/2 loaf bread, cut into cubes.
    6 eggs
    1 cup milk
    1 tsp cinnamon
    1 tbsp vanilla extract
    1/8th cup brown sugar
    2 ripe bananas sliced
    4 tbsp melted butter
    1/2 cup chopped pecans (I added more)

    Instructions
    Preheat oven to 350 degrees Fahrenheit. Generously grease a 9x13 casserole dish, then line the bottom of it with sliced bananas, melted butter and chopped pecans.

    In a large bowl mix together eggs, milk, cinnamon, vanilla and 1/8 cup brown sugar.

    Fill the rest of the pan with cubed bread, pour the egg mixture over the bread, mix well, and cover with foil. Pour 1 ½ cups water in an oven safe dish. Place the water filled dish and your french toast casserole in the oven. Bake for 30-40 minutes, or until the eggs are completely cooked.

    Pull the casserole dish out of the oven, set on a cooling rack. Let the french toast cool until warm, then flip the french toast upside down on a parchment paper lined cookie sheet or cutting board. Remove the pan and serve. Top with more bananas, nuts and maple syrup.
