Chicken Minestrone Soup



  • Chicken Minestrone Soup

    Ingredients:
    3 Tablespoons olive oil
    1 cup minced onion
    1/2 cup chopped zucchini
    1/2 cup cut green beans
    4 cloves garlic, minced
    4 cups vegetable broth (do not use chicken broth...it does not taste good...it has to be vegetable broth)
    1 can kidney beans, drained and rinsed
    1 14oz can petite diced tomatoes
    1 teaspoon dried parsley
    2 teaspoons dried oregano
    1 teaspoon salt
    1/2 teaspoon black pepper
    1 teaspoon dried basil
    1/2 teaspoon dried thyme
    1/2 teaspoon dried sage
    3 cups hot water
    3 cups fresh baby spinach, chopped
    1/2 cup small shell pasta
    1 pound chicken, shredded

    Directions:
    Cook chicken in a bit of water in a big pot on the stove or plop in a crock-pot, then shred. Add all the above ingredients into the pot, bring to a boil, cook until the pasta is done. Adjust spices if needed, add a bit of fresh Parmesan if desired and enjoy!

    *** You must cook the chicken separately, do not short cut and add raw chicken to soup mix, it changes the taste.
    *** You can use a good Italian Herb mix instead of adding Oregano, Basil, Thyme, Sage and Parsley. You'll still want to add garlic and onion separately.
