Creamy Garlic Cauliflower Alfredo Sauce
Ingredients
1 medium cauliflower head 4 cups of florets
7 cloves garlic, chopped
1/2 cup broth or water reserved from cooking the cauliflower
2 Tablespoons Ghee
Nutritional Yeast to taste
Garlic and Onion Salt to taste
dash of salt and pepper to taste
** 1/2 cup grated Parmesan cheese optional for added creaminess and depthDirections:
Preheat oven to 425 degrees F. Cut cauliflower into chunks, place on large baking sheet. Cut up your garlic, place on the baking sheet. Add 1 tablespoon ghee and place in heated oven for 35-40 minutes. Stir the vegetables to evenly coat in ghee about 15 minutes in. Remove from oven when done and allow to cool.Place cauliflower, roasted garlic cloves, 1/2 cup of a cup of broth and the remaining ingredients in a blend or food processor. Blend until smooth. Add more liquid if your sauce is too thick. Taste the sauce and adjust seasonings as needed. Use the sauce right away or pour into a jar and use later.

@norcal_in_az I made it last night and I served it over grilled chicken and noodles. My kids even devoured it. I love it. I can't eat most dairy so I like to get creative.
