Smothered Pork Tenderloin Tips

I made this last night and while it's fresh in my mind I figured I would share. I was buying meat at our local grocery store a few weeks ago and spotted these tenderloin tips for $1.69 a pound. Whole tenderloins are usually five bucks plus a pound so I grabbed a package. Hormel was the brand and there was around two pounds in each one and no waste, all meat. I went back and bought four more after cooking the first package on the pit. So here we go.
Hormel Pork Tenderloin Tips two pounds or less sliced about a half inch thick then cut to bite size
Season the pork with garlic salt and black pepper then dredge in flour
In a large skillet heat two tablespoons of olive oil or enough to coat the skillet and brown the pork well
Mix one can of cream of mushroom soup with one can of hot water and a package of Lipton Onion Mushroom Soup mix (the dry stuff) Whisk it together in a bowl
Pour the soup mixture over the tips and add a little water if they aren't covered and simmer covered for an hour or longer until tender (I went longer)
Serve over cooked rice (egg noodles would be good also)
Don't have pork, substitute venison or sirloin/beef stew meat

That price on tenderloins is interesting. Summertime down here baby back ribs go for about a low of $3.00/pound to a high of $3.95/ pound. Boneless tenderloin I've seen as low as $1.45/pound if you buy the whole strap.
Funny we pay more for fat and bone and about half for lean meat. Surprised meat varies that much across the country.

Babybacks go for about $1.99/lb on sale in the summer. Now they're about $4/lb.

Whole pork loins sometimes are .99 per pound around holidays but the tenderloins which are I believe are cut from the underside of the spine area are usually higher. Beef tenderloins are outrageously priced but oh so good. Around Christmas and New Years pork Boston But Roasts and loins may be as low as .89 a pound for tamale making. That's when I stock up for sausage meat. Kind of quit messing with feral hogs and they are talking about using poison to control them now. I just made twenty pounds of beef and pork sausage today and will be smoking it tomorrow. Recipe following also.

@bigfoot yup....we can get pork for stupid cheap too at times. Great time to stock up and toss in the freezer for another day. Beef is and has been way overpriced for so long, but folks keep buying so the price will stay up. :(
