Salsa Chicken Crockpot Recipe
- 6-9 chicken thighs, or whatever chicken parts you want
- 1 can rinsed black beans (optional, we're not huge fans of black beans so I leave this out)
- 1 cup chunky salsa
- 1 cup frozen white corn (if you don't have white corn, yellow will work just fine)
- 1 cup sour cream (or a creamy soup of sorts, cream of mushroom, cream of chicken, etc...) This step is of course optional, if you are wanting to cut out calories then leave this out, however I must say that it is much better with creaminess to it.
Put your chicken in the crock pot (it can still be frozen, it will just need to cook for a little longer). Toss in salsa, corn and sour cream.
Cover and cook on low for 6-9 hours, or on high for 4-5. If you decide to use breasts, increase your salsa by 1/2-1 cup. Serve over rice or tortilla chips or in taco shells. We serve it over rice.0
