Salsa Chicken Crockpot Recipe


    • 6-9 chicken thighs, or whatever chicken parts you want
    • 1 can rinsed black beans (optional, we're not huge fans of black beans so I leave this out)
    • 1 cup chunky salsa
    • 1 cup frozen white corn (if you don't have white corn, yellow will work just fine)
    • 1 cup sour cream (or a creamy soup of sorts, cream of mushroom, cream of chicken, etc...) This step is of course optional, if you are wanting to cut out calories then leave this out, however I must say that it is much better with creaminess to it.

    The Directions.
    Put your chicken in the crock pot (it can still be frozen, it will just need to cook for a little longer). Toss in salsa, corn and sour cream.

    Cover and cook on low for 6-9 hours, or on high for 4-5. If you decide to use breasts, increase your salsa by 1/2-1 cup. Serve over rice or tortilla chips or in taco shells. We serve it over rice.
