Potato Salad
I love potato salad, but until a few years ago I had never made it myself. Brittel got a recipe from his grandma and I modified it a bit to make it better. The result is below:
What you'll need:
5-6 potatoes
3 eggs
Yellow mustard
Mayonaise (or Miracle Whip if you prefer)
Pickle Juice
Salt and PepperAdditions:
1-2 sticks celery
1 clove garlic
1/3 large onion (or one small onion)
PicklesBoil potatoes and eggs. Potatoes need to be soft but a little on the firm side still, eggs hard boiled. Cool both under cold water. Once cooled chop both up to the desired size and toss in the bowl. Then salt and pepper them to your liking. Add approximately 1-2 tablespoons pickle juice, then add approximately 1-1 1/2 cups mayo and 1-2 tablespoons mustard. You can stop here and have a pretty good salad but if you want more crunch and make your taste buds dance a little keep adding more stuff. Mince up 1-2 sticks celery, 1 clove garlic, 1/3 onion and 4-5 snack 'mmm pickles or equivalent of different style pickle. Mix all together and enjoy!
*I'd start off with less of everything and keep adding more until you get it to your liking

Another variation:
Julie's awesome potato salad.
5 pounds of potatoes.
Scallions or Chives by taste.
4-5 hard boiled eggs.
Mayo (about 15 oz. for this big of a batch)
Marie's yogurt ranch dressing (about 5-6 oz)
Vinegar (just a splash to taste)
1-2 Tbsp. of dill relish.
Mustard (drizzle to taste).
Bacon bits (real).Seasonings.
McCormick Grillmates steak rub.
Black pepper.
Tony Chachere's orig. creole.
Salt.
All of the seasonings are to taste.
