I love potato salad, but until a few years ago I had never made it myself. Brittel got a recipe from his grandma and I modified it a bit to make it better. The result is below:
What you'll need:
Mayonaise (or Miracle Whip if you prefer)
Salt and Pepper
1-2 sticks celery
1 clove garlic
1/3 large onion (or one small onion)
Boil potatoes and eggs. Potatoes need to be soft but a little on the firm side still, eggs hard boiled. Cool both under cold water. Once cooled chop both up to the desired size and toss in the bowl. Then salt and pepper them to your liking. Add approximately 1-2 tablespoons pickle juice, then add approximately 1-1 1/2 cups mayo and 1-2 tablespoons mustard. You can stop here and have a pretty good salad but if you want more crunch and make your taste buds dance a little keep adding more stuff. Mince up 1-2 sticks celery, 1 clove garlic, 1/3 onion and 4-5 snack 'mmm pickles or equivalent of different style pickle. Mix all together and enjoy!
*I'd start off with less of everything and keep adding more until you get it to your liking

I love potato salad. But it's no longer on my approved diet list.
