Grain Free and Dairy Free Doughnuts



  • Grain Free and Dairy Free Doughnuts

    INGREDIENTS
    1 and ¼ cups blanched almond flour
    2 TBS coconut flour
    ½ tsp unrefined sea salt (I use this one)
    ½ tsp baking soda
    2 eggs
    4 TBS full fat coconut milk
    4 TBS real maple syrup (or honey)
    4 TBS ghee, melted
    ½ tsp vanilla extract

    Directions:
    Preheat oven to 350F and lightly grease a doughnut pan.
    Mix all the ingredients in a bowl and stir until well combined.
    Pour the batter into your doughnut pan, filling 3/4 of the way full.
    Bake at 350
    F for 18-20, or until doughnuts are thoroughly cooked.
    Place on cooling rack to cool.

    While the doughnuts are cooling mix up a glaze:

    Maple Glaze
    ½ cup raw cashews
    ¼ cup real maple syrup, grade B
    4 TBS coconut butter, melted
    2 TBS ghee, melted
    2 TBS filtered water (plus more if necessary)

    • Place all glaze ingredients into high speed blender. Process until smooth and creamy. Add more water a tiny bit at a time if it's too thick to pour. Pour into shallow bowl. Dip each donut into glaze with a twisting motion to let extra run back into bowl. Place back onto cooling rack.

    Chocolate Glaze
    2 Tablespoons Ghee
    3/4 cup Enjoy Life Chocolate Chips

    • Combine ingredients in a small bowl, use microwave or double broiler to melt the mixture. Dip each doughnut into the glaze with a twisting motion to let the extra run back into the bowl. Place on cooling rack.

  • And they're done. Delicious and hit the spot. Until tonight, I couldn't tell ya the last time I had a doughnut. It's been YEARS!
