3 Ingredient Pancakes

    1 banana
    2 large eggs
    1 teaspoon baking powder

    Preheat a skillet on your stove over medium-low heat. Cut your banana into thirds, place in a medium bowl. Add your two large eggs and mash the mixture until it's almost smooth. Add your baking powder, stir for a few seconds to incorporate well. Add some cinnamon or fruit or baking chips at this point if you'd like, we really love sprinkling some cinnamon in.

    Add some oil to your skillet and add the pancake mix to the skillet, typically 1-3 spoonfuls per pancake. Let the pancake cook and when bubbles form on the top, flip the pancake over, let cook for a minute or two, the place on plate. Repeat until all of your batter is used.

    We like to top with fresh maple syrup or local raw honey. Enjoy!
