Paleo Drop Biscuits
Ingredients:
2 1/2 cups almond flour
1/2 tsp salt
1/2 tsp baking soda
1/4 cup butter, melted
2 eggs
1 Tbsp honey
1/2 tsp apple cider vinegar
2 Tbsp milk of choiceDirections:
- Preheat the oven to 350*F.
- Add the dry ingredients to a large bowl.
- In a medium bowl, combine the wet ingredients.
- Add the wet ingredients to the dry mixture about 1/3 at a time, stirring until just combined.
- Line a baking sheet with parchment paper, and drop large tablespoons of dough to make 2" biscuits.
- Bake for 10-12 minutes, or until the tops are a light golden brown.
- Allow them to cool on their cookie sheet for a couple of minutes, and enjoy!

I've been seeing a few healthier recipes recently using almond flour, so I thought I would pick some up this past weekend. But I was shocked to see even Walmart had it priced at about a premium of 10x versus conventional flourš³!? Are there better resources out there? I suppose I should still try it out, but ouch.

@midwestside I get mine off Amazon (I put a link in the recipe) or Vitacost. Generally speaking almond flour will run about $5-8/lb. You can also get plain, unsalted almonds and grind them to make almond flour (simply use a food processor and run it until the mixture is smooth) or you can get raw almonds, bake them and then grind them.

That recipe uses coconut flour. We've had those before too. They're good if you don't mind a slight coconut flavor to your biscuits.
