Reverse Seared NY Strip Steaks



  • Made this for dinner last night. One of the best steaks I've ever done myself at home. I won't be cooking steaks any other way from now on.

    • Pull your steaks from the fridge about 30-45 mins before you put them on the grill. Season them well with salt and pepper on both sides.

    • Set your grill or smoker up to smoke the steaks at about 180*. When ready, place the steaks on the grill and let them smoke for about an hour.

    This is what they should look like after smoking for about an hour. Brown, but still pretty raw looking.

    • Pull them from the grill and crank the temp up to 450*-500*. Get it hot. Place the steaks back on the grill, right on the hot spots of your grill. Let it go for about 60-90 seconds. Flip and repeat. Let them rest for about 20 minutes before serving.

    The steaks came out prefectly medium rare, nice warm pink center. I got a hard sear on the outside that locked in all the juice, and the inside had a really great smoke flavor to it.
