Copycat Jimmy Dean Ground Sausage



  • Orkan requested Sausage Gravy and Biscuits for breakfast tomorrow and when I went to grab some sausage out of the freezer, I discovered I was plumb out. Instead of accepting defeat, I turned to the internet to find a recipe I could make and this is what I came up with:

    Regular
    16 ounces ground pork
    1 teaspoon salt
    1/2 teaspoon dried parsley
    1/4 teaspoon dried sage
    1/4 teaspoon ground black pepper
    1/4 teaspoon dried thyme
    1/4 teaspoon crushed red pepper
    1/4 teaspoon ground coriander

    Hot
    16 ounces ground pork
    1 teaspoon salt
    1/2 teaspoon cayenne pepper
    1/4 teaspoon dried sage
    1/4 teaspoon ground black pepper
    1/4 teaspoon crushed red pepper
    1/4 teaspoon ground coriander

    Maple
    16 ounces ground pork
    3 tablespoons maple syrup
    1 teaspoon salt
    1/4 teaspoon ground coriander

    Combine all the ingredients for the flavor of your choice in a medium bowl. Form the sausage into patties and cook in a skillet over medium heat until browned all over.

    Each recipe makes 1 pound of sausage.


    • For my sausage tonight, I used ground beef and followed the ingredients for Regular. It tastes really good and I'm thinking it'll be amazing in the sausage gravy in the morning :)

    UH OH, I just spotted this. Before this is over I will have you buying a meat grinder. I started making sausage last year and I love it. Pan sausage made fresh with pork loin and your own seasonings can't be beat. I even make a chicken cheese poblano sausage I stuff in casings that is different. Your recipe looks really good, I have all those spices. I over did the coriander on some link sausage but t was still edible. And a smokehouse, got to have one.

    I can relate to that. My wife and I live in a 30 x 50 metal building made into a house that is separated into two sections with a parlor door between them. We have a master bedroom with bath that is in one end and the other end is a single bedroom with bath and an open kitchen dining area that is around 900 square feet total. I have an island in the kitchen area that is where I set the grinder and stuffer up. Luckily my shop is a walk away from the house and lots of my cooking stuff resides there. My next cooking project is making boudin sausage. I will be sure to post the results.
