    Enchilada Sauce
    2lbs chicken, cooked and shredded
    Shredded Cheese (I used a bit of colby jack, pepper jack and cheddar)
    Whatever other Enchilada toppings you wish (green chilies, olives, diced onions, etc..)
    Fresh Cilantro (dehydrated works just as well)
    Corn Chips

    Cook 2 pounds of chicken, shred and place in a casserole dish. Preheat oven to 425*F. Pour your desired amount of Enchilada Sauce over the chicken, add 1/2 of your shredded cheese, any extras you wish to add and stir well. Spread the mixture out evenly across the casserole dish, top with the remaining cheese. Bake for 10-15 minutes in oven. Pull out of the oven once the cheese is melted and bubbly, top with fresh cilantro. Serve over corn tortilla chips, a bed of spinach or whatever you desire. ENJOY!
