  • Strawberry Chocolate Grain-Free Dairy Free Cake

    3/4 cup cocoa powder
    1/3 cup coconut flour
    1/3 cup tapioca flour
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    5 large eggs
    1 cup applesauce (no sugar added)
    1/4 cup local honey
    1 tablespoon vanilla extract
    1/4 cup coconut oil, melted (I use Ghee for a richer chocolate)
    2 tablespoons strawberry juice, from 4 medium fresh smashed strawberries (I tend to puree 4 strawberries and toss them in)

    Chocolate Frosting:
    2 cups Enjoy Life Chocolate Chips
    1 tablespoon coconut oil (I use Ghee here too)
    2 tablespoons hot coffee
    10 medium fresh strawberries, hulled and sliced up

    Grease two 9" round cake pans with a bit of oil. Preheat oven to 350*F.
    Add flours, baking soda, baking powder and salt in a large bowl, combine well. Next add the wet ingredients in and use a hand mixer on medium-low speed to combine.
    Once blended, evenly our into pans. Baking for 25-30 minutes, or until baked all they way.
    Let cool on a wire rack.

    Place medium bowl over a small pan filled with about 1" water. Heat water over medium heat. Once water begins to slowly boil, add chocolate to the bowl on top and stir until chocolate has completely melted. Add coffee and coconut oil, stir to combine.
    Remove the cakes from the pans, place on a cake stand or plate. Place 1/2 of the frosting on top of the cake and evenly coat. Carefully stack the 2nd cake on top of the first. Using the rest of the frosting evenly coat the top cake and sides if you have enough frosting.
    Now place the cut up strawberries across the top of the cake and continue laying them out until they almost reach the edges.
    Let the frosting set up a bit before enjoying!
