  • Grain-free Banana Nut Chocolate Chip Muffins

    Ingredients:
    2 ripe bananas, smashed
    1 1/2 cup almond flour
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp vanilla
    Pinch of salt
    2 eggs, whisked
    1/4 cup ghee (use melted butter if you wish)
    1/3 cup chopped pecans or walnuts
    1-2 Tablespoons honey or maple syrup (depending on how ripe your bananas were and how sweet you want your muffins)
    1/2 cup dark mini chocolate chips

    Directions:
    Preheat oven to 350F.
    Combine all wet ingredients in the bowl, including bananas. Stir until well combined. Next add salt and cinnamon. Mix again. Then add the almond flour and baking soda. Stirring until well incorporated. Fold in your nuts and chocolate chips. Pour batter into a well greased or lined with cups muffin pan, filling each cup about 3/4 full.
    Bake at 350F for about 25 minutes (give or take a few minutes, check doneness by inserting a toothpick, if it comes out clean, they're done).
    Store covered in the fridge or you can freeze these to enjoy later.
