  • Sausage Quiche with Sweet Potato Crust

    Olive Oil
    Medium Sweet Potato
    1/2-1 pound breakfast sausage, cooked and crumbled
    1 teaspoon fresh rosemary, chopped
    10 eggs
    2 tablespoons milk
    Salt, Pepper and whatever other spices to taste


    • Preheat oven to 350 degrees
    • Lightly grease pie tin with olive oil
    • Thinly slice sweet potatoes and place in bottom of pie tin
    • Spread sausage on top of potatoes, press rosemary into the sausage.
    • Beat eggs and mix in milk then pour eggs on top of sausage.
    • Bake at 350 degrees for 25-30 minutes, or until eggs are set.
