Bean Free Cauliflower Hummus

  • Bean Free Cauliflower Hummus

    1 medium head cauliflower, broken into small florets
    Cooking Oil
    1 clove garlic
    1/3 c. tahini
    2 tbsp. lemon juice
    2 tbsp. olive or avocado oil
    salt + pepper to taste
    lemon wedges, olive oil & parsley for garnish
    pita bread and fresh veggies for serving

    Preheat oven to 400 degrees. Lightly oil a baking sheet. Place cauliflower florets on baking sheet. Drizzle with additional oil. Roast for 40 minutes, stirring halfway through cooking time. Remove from oven and allow to cool.

    Once cooled, combine cauliflower, garlic, tahini, lemon juice, your choice of oil, salt and pepper in blender or food processor. Process until smooth. If you'd like a thinner hummus, add 1 Tablespoon water at a time, until desired consistency is achieved.

    Pour into Tupperware or serving bowl. Drizzle with olive oil and sprinkle with paprika. Serve with lemon wedges, pita bread, and fresh veggies.

  • Have you ever done the mashed cauliflower instead of potatoes?
    We love it. Will have to try this.

  • @hypo I love mashed cauliflower, I also love cauliflower rice and in the mornings I'll take 1-2 cups cauliflower toss it in the fry pan, use the spatula to dice it up into about 1/2" pieces to make "hashbrowns"...throw in a bit of bacon grease, garlic, onion, pieces of bacon, s&p....topped with an over easy egg. Yum-O!

  • Good idea. Trying to reduce carbs myself.
    Looks like I am stuck at home today anyhow due to slow freight so I may go grocery shopping in a bit.

    One more week till my new schedule.
    Home every day and a scheduled run instead of Extra Board driver that may or may not work.
    I was staying out a week or two at a time just to make sure I had enough miles on the paycheck.
