No direct heat on the meat, heated between 250 & 300 degrees F. Some water with natural hickory liquid smoke added*. Cooking for 6+ hours until 195*F internal temp reached :)
This should add more flavor, lessen the char & make the pork uber moist. Or at least I hope. We'll see. Gotta love making new recipes & improvising when you don't have exactly what you want!
most liquid smoke is made by flavoring the water with imitation flavors. Real liquid smoke is obtained by capturing the smoke & liquid from real wood chips. I always try to use as close to natural form as possible. I'll post up a link where I buy my liquid smoke in a bit :)
1 pizza crush, pre-baked ( I used Fat Head Pizza Crust for ours, and I put cornmeal on the pan to prevent the dough from sticking)
1 cup BBQ sauce
2 pork loin chops, cooked and cubed (you can sub whatever meat you'd like here...chicken works really well for this too)
1 cup chopped red onion
1 cup chopped spinach, chopped
2 cups shredded Colby-Monterey Jack Cheese
Preheat oven to 350*F.
Place pizza crust on a medium baking sheet. Slather the crush with your BBQ sauce. Top with cooked meat, onions, cheese, and spinach and whatever else you'd like to add.
Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
I like the 3-2-1 method for ribs. 3 hours on smoke, braise for 2 hours, 45mins-1hour for the sauce. Oh and I've switched from Baby Backs to St Louis style. They have more meat on them and are cheaper per pound.
-Brush the ribs with a mixture of 1cup apple juice, 2/3 cups of yellow mustard, and 1 tablespoon of Worchester sauce
-then coat with a heavy dose of your favorite BBQ rub
-smoke at 150-180 for 3 hours
-pull them from the grill and increase the heat to 325.
-lay them in foil, coat each rack of ribs with 1/2-3/4 cup of brown sugar and a few tablespoons of honey. Wrap the foil around the ribs and add 1 cup of apple juice. Seal the foil.
-braise for 2 hours at 325
remove from the foil, place them back on the grill and apply your favorite sauce. Allow them to cook at 325 for another 45mins to and hour.
