      @bigfoot I have pig fat to render to lard, I'm looking forward to the cracklings. I also have beef fat to render into tallow. I use whipped tallow for lotion and chapstick. Best stuff ever! I've never heard of apples being used when rendering, perhaps it was to tame down the pig taste or provide a buffer to prevent burning. A bit of water in the pot is encouraged to prevent burning.

      @lottie I’ve never considered making venison broth. It sounds delicious though so I think I’ll wash out the big stock pot and give it a whirl. There’s a large pressure canner at the ranch and several cases of pint Mason jars so if I manage not to screw it up, I’ll can a bunch for use throughout the year.

      @lottie Minute Rice is cooked then dried so yes it gets soggy especially the next day. Just about all the chefs that make this dish add uncooked rice last and some cook the rice and serve the Jambalaya on top of a bed of rice. Either way it's good. I make pepper steak almost the same way I will have to get my recipe book out and make some.

      100% sourdough variation: Add 2+ cups of sourdough discard, in place of the 1 cup flour. Add a bit of sugar or other sweetener to offset the sour taste of the sourdough. Bake as directed above.

      @bigfoot Typo, 8 oz of brown sugar. I can't taste that either in the sausage maybe it's there to tame the salt down.

      Blutwurst (blood sausage) is hard to find these days. When I was younger my father would take me to a restaurant called "The Old German." They had blutwurst on the menu and everytime I ordered it the waitress would say, "Willst du das Blut?!" To which I replied, "Ja bitte." It is quite good if you mix it with kraut, spatzen, and horseradish.

      @bull81 enjoy! One of the problems with goulash is there are so many variants of it. Growing up, my family always added whatever veggies we had on hand. Most of the time it was corn, carrots and beans of some kind. A friend's family made it without any veggies and they made it more of a BBQ flavor. So you may want to 'play around' with the spices and veggies (if adding any at all) to find what you like most.

      Oops, think I goofed up. The potato flakes are Hungry Jack brand. Don't know why I got Aunt Jemima involved in this. I need to go look at the box in my cabinet to make sure. Anyway, it's good. I bought bone in thighs yesterday at HEB for .99 a pound so I'm set.

      A different animal here . . . Yesterday 40 - 60 mph winds with too much dust blowing brown-out on visibility and ruined my plans for going out to the range. Very windy again today.
